The 2000 Dom Pérignon Plénitude 2 reveals a bright golden hue with fine, persistent bubbles, opening with aromas of aquatic vegetal notes, white pepper, and gardenia, followed by subtle peaty and smoky undertones. On the palate, the wine bursts forth with crisp citrus and mineral tension, then evolves into a sensual fullness of ripe stone fruit, candied citrus, and toasted brioche. Extended ageing on lees (released in 2017 after nearly 17 years of maturation) has amplified its depth, creaminess, and complexity, while maintaining a striking freshness and precision. The finish is long, layered, and vibrant, embodying the unique character of the 2000 vintage elevated by Dom Pérignon’s second plenitude.

About Winery

Dom Pierre Pérignon, a French Benedictine monk, set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Dom Pérignon dedicated over 40 years to this mission, employing a visionary spirit and daring approach to the wine making process. Over that time, he became known as the "father of champagne" for laying down the fundamental rules for the traditional Champagne production method (La Methode Champenoise or Traditionelle).
